AIP Healing Chicken Soup


  • 1 pound boneless, skinless chicken thighs or breasts
  • 6 cups chicken bone broth (preferably homemade)
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 medium zucchini, diced
  • 1 cup chopped kale or spinach
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • Salt, to taste
  • Extra virgin olive oil, for cooking


  1. Heat a large soup pot over medium heat. Add a drizzle of olive oil and sauté the diced onion, carrots, celery, and garlic until they start to soften, about 5 minutes.
  2. Add the grated ginger to the pot and sauté for another minute until fragrant.
  3. Push the sautéed vegetables to one side of the pot and add the chicken to the other side. Cook the chicken for about 5 minutes on each side until browned.
  4. Pour in the chicken bone broth, making sure the chicken is fully submerged. Bring the soup to a boil, then reduce the heat to low and cover. Let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Add the diced zucchini and chopped kale or spinach to the pot. Simmer for an additional 5-10 minutes until the vegetables are tender.
  7. Stir in the fresh lemon juice, chopped parsley, and cilantro. Season the soup with salt to taste.
  8. Serve the AIP Healing Chicken Soup hot and garnish with additional fresh herbs, if desired.
