Spaghetti Aglio e Olio Recipe

  • 8 ounces (225 grams) spaghetti

  • Salt, to taste
  • Grated Parmesan cheese (optional)
  • Freshly ground black pepper (optional)


  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain the cooked spaghetti, reserving about 1/2 cup of the pasta water.
  2. While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes to the skillet and sauté until the garlic turns golden brown and becomes fragrant. Make sure not to burn the garlic, as it can turn bitter.
  3. Remove the skillet from heat and add the cooked spaghetti to the skillet. Toss the spaghetti in the garlic-infused oil until it is well coated. If the pasta seems dry, you can add a few tablespoons of the reserved pasta water to moisten it.
